Wheat free Meat Loaf.
2 eggs
1kg Mince
2 Potatoes Grated
2 Onions Grated
1/2 pepper grated
2 cups wine
1/4 cup balsamic vinegar ( or a few dashes)
Oregano, Basil, parsley ( whatever you have.
Mix all the ingriedients with your hands until it's it's thoroughly combined and quite squidgy.
Bake at 180C for 1 hr 15 mins in a small roasting tin or whatever you have to hand. Obviously check it's thoroughly cooked before serving.
Everyone enjoyed it especially my biggest boy. I served it with roast tatties , roast carrots, parsnips and boiled cabbage
